Currently Cooking Homemade French Fries

We had these delicious little guys as a side with a roasted beet, walnut, and blue cheese salad with a mustard-balsamic dressing.

Homemade French Fries

3 russet potatoes, peeled and sliced into sticks 1/2 – 3/4 inch thick
about 1/8 cup olive oil
salt and pepper to taste

1. Preheat the oven to 400 degrees and line a baking sheet with parchment paper.
2. Toss the potato strips with the olive oil and then spread them over the parchment. Sprinkle with salt, pepper, and oregano.
3. Bake for about 40-45 minutes or until browned. Make sure to turn the fries about every 10-15 minutes.

*this is another great recipe that’s easily customized: try other spice and flavor combinations like chili powder and paprika, garlic, or even curry with a yogurt dipping sauce!
