Currently Cooking… Rustic Bread Salad

This is a perfect and easy recipe for any old, hardening bread you have lying around your apartment. We had a 5-day-old loaf of whole wheat sourdough from Le Pain Quotidian that was beyond the point of salvaging through toasting.

Ingredients:
1/2 day old baguette, torn into chunks
3 cups tomatoes, chopped
3/4 cup red onion, chopped
1/2 cup shredded Parmesan cheese
1/3 cup olives, chopped
for the dressing:
1 tsp. dijon mustard
3 tbls. red wine vinegar
2 tsp. sugar
2/3 cup olive oil
1/4 tsp. salt
a few good grinds of pepper

Preparation:
1. Mix all the ‘salad’ ingredients in a large bowl.
2. Whisk together the dressing.
3. Mix it all!
